  • 1 package NutriNoodle Soybean Fettuccine
  • 1 can coconut milk
  • 1 cup pumpkin puree
  • 4 cups chicken broth
  • 2 cups cooked diced chicken breast
  • ¼ cup lime juice
  • ¼ cup peanut butter
  • ¼ cup curry paste 
  • 1 tablespoon soy sauce
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder
  • 4 cups vegetables, such as onion, mushrooms, bean sprouts, or cabbage

Directions:

Prepare pasta according to package directions. Place all ingredients in a pot, bring to a boil, and simmer for 15 minutes. Makes 8 servings. Optional: garnish with peanuts and cilantro.

Fettuccine with Beets and Walnuts

Ingredients:

  • 1 package NutriNoodle Soybean Fettuccine
  • 1 pound of beets with tops attached (or use 1 can of sliced, unpickled beets and 8 ounces of beet or collard greens or swiss chard)
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 4 oz. of walnuts
  • (optional) 2 oz. blue or feta cheese

Directions:

Prepare pasta according to package directions. If using fresh beets, clean them and peel and slice the roots. Roast the roots and saute the greens in olive oil. Toss the remaining ingredients except for the cheese together. Serve with cheese crumbled on top, if using.
