 INGREDIENTS :

  • 1 package BariatricPal French Vanilla Shake/Pudding
  • 1/2 cup pineapple, diced      
  • 1 large egg
  • 1 package Equal                    
  • 1 tsp. coconut extract                                   

Pina Colada Cookie  PREPARATION :

  • Preheat oven to 350.
  • Coat non-stick pan with cooking spray.
  • Cook pineapple at medium heat until most of the juice evaporates.
  • Mix other ingredients together until cookie dough is formed.
  • Add the pineapple.
  • Drop by teaspoonful onto a cookie sheet that has been sprayed with no-stick cooking sprat.
  • Bake in 350 oven for 8 minutes.
  • Cool and enjoy.
