Pina Colada Cookie
INGREDIENTS :
- 1 package BariatricPal French Vanilla Shake/Pudding
- 1/2 cup pineapple, diced
- 1 large egg
- 1 package Equal
- 1 tsp. coconut extract
PREPARATION :
- Preheat oven to 350.
- Coat non-stick pan with cooking spray.
- Cook pineapple at medium heat until most of the juice evaporates.
- Mix other ingredients together until cookie dough is formed.
- Add the pineapple.
- Drop by teaspoonful onto a cookie sheet that has been sprayed with no-stick cooking sprat.
- Bake in 350 oven for 8 minutes.
- Cool and enjoy.
